Vegan I Gluten Free
Time: 10 minutes
1 cup quick oats (gluten free)
2 cups coconut milk
1 tsp. cinnamon
1/2 tsp. vanilla (optional)
1 tbsp. maple syrup or honey
Fresh or frozen berries
Vegan gluten-free brownie pieces
Maple syrup or honey drizzle
To prepare the oats - Add all ingredients, except your sweetener of choice, to a small sauce pan and bring to a boil over medium heat. Once boiling, reduce the heat to low and cook until tender, 4-6 minutes. Stir occasionally.
Add more liquid to adjust consistency, depending on how you prefer the texture of your oats (more runny or thick).
NOTE: If using frozen berries you can stir them into the oat mixture for 2 - 3 minutes to thaw. Alternatively you can add on top of the oat bowl and let thaw slightly.
To serve - Transfer the oat mixture into a bowl and stir in your sweetener (maple syrup or honey). Garnish with your favorite toppings!
