Serves: 8 - 10 donuts

Time: overnight soaking + 30 minutes


Dry Ingredients

1 cup oat flour

1/2 cup coconut flour

1 tsp. baking soda

1/8 tsp. salt


Wet Ingredients

1 banana

10 dates, pitted & soaked

1 cup coconut milk

1/4 cup nut butter

1/4 cup coconut oil


1 cup berries (frozen or fresh)


Cashew Frosting

1 cup cashews, soaked overnight

1/2 cup dates, pitted & soaked

1 tsp. lemon juice

Pinch of salt

Water, as needed


Toppings

Coconut shreds

Lavendar

Cacao nibs

Preheat the oven to 190C/375F. Grease your silicone donut mold with coconut oil.


To prepare the donuts - In a large mixing bowl combine the dry ingredients. Stir well.


Add the wet ingredients to a blender or food processor and mix, 1 - 2 minutes, until smooth and well combined. Add the mixture to the bowl with the dry ingredients and stir well.


Stir in your berries.

Evenly spoon the mixture into the donut mold. Work in batches as needed.


Bake for 15 - 20 minutes, until golden brown and slightly risen.


Let cool for 15+ minutes before removing from the donut mold.

To make the cashew frosting - Place your cashews in a bowl and cover with 2 - 3 inches of water. Soak your cashews overnight, 8 - 10 hours. Strain the water and rinse the jelly coating off the cashews. Alternatively you can soak your cashews in boiling water for 30+ minutes.


Add all your ingredients to a blender or food processor and mix until smooth and creamy. Adjust the consistency with water.


Transfer the mixture into a piping bag (or plastic bag and cut the corner) and drizzle among your donuts. Alternatively you can spread the mixture on the top.


Decorate with your favorite toppings and enjoy!


Store leftovers 1 - 2 days.
