Choco Buckwheat Pancakes

Serves: 10 - 12 small pancakes

Time: overnight soaking + 25 minutes


1 cup buckwheat groats

1/2 cup water

2 tbsp. cacao powder

1 tbsp. coconut oil

2 tsp. maple syrup or honey

1 tsp. cinnamon

1/4 tsp. ground clove

1/4 tsp. nutmeg


Toppings

Fresh fruit

Coconut shreds

Maple syrup or honey drizzle

Nut butter

To prepare the buckwheat - Add the buckwheat groats to a bowl and cover with 2 - 3 inches of water. Soak overnight, 8 - 12 hours. Strain the water and rinse the buckwheat.


To prepare the pancakes - Add all pancake ingredients to a blender or food processor. Mix on medium-high speed until smooth, 30 - 60 seconds.


Heat a large non-stick skillet over medium-high heat. Add ~1/4 - 1/3 cup pancake mixture for each pancake. Careful not to over crowd the pan. Heat 2 - 3 minutes, until bubbling and then flip, cooking an additional 1 - 2 minutes. Once both sides are golden brown transfer the pancakes to a plate.


To serve - Garnish your chocolate pancakes with fruit, coconut shreds, a nut butter drizzle, etc.


To store - Best served fresh. Keep leftovers 1 day in the fridge.
