Serves: 12 - 15 balls
Time: 30 minutes
3/4 cup dates, pitted and soaked
1/2 cup almonds
1/2 cup almond butter
1/2 tsp. ground cinnamon (optional)
1/4 tsp. salt
1/4 cup coconut oil
1/4 cup cacao powder
1 tbsp. coconut sugar (or substitute 2 tbsp. maple syrup or honey)
Remove the pit of the dates and soak the flesh for 10+ minutes, until soft.
Line a container or baking sheet with a silicone mat or parchment paper.
Add all the soft dates and filling ingredients to a food processor or blender and pulse until well combined and a sticky mixture is formed.
Use your hands to form the mixture into 1 - 2 inch size balls and place them in your prepared container. Tip: It's ok if they are sticky and don't form perfect round shapes! They will keep shape when you place them in the freezer!
Place the container in the freezer for 15+ minutes while you prepare the chocolate layer.
In a small mixing bowl combine all the chocolate coating ingredients. Stir well. Once the balls have had time to set, remove the container from the freezer. One by one roll the balls gently in the chocolate mixture. Add any topping ingredients right away, before the chocolate hardens. Place the coated balls back into the container.
When all the balls have been chocolate coated and topped with your decorations of choice - return them to the freezer. Let them rest 10 minutes before enjoying!
Store in the freezer - let slightly thaw before eating!
