Vegan I Gluten Free Serves: 10-12 balls
Time: 25 minutes + 4 hours resting time
16 dates, pitted and soaked in warm water for 10 minutes
1/4 cup unsweetened shredded coconut flakes
1/2 cup almond butter
3 tbsp. chia seeds
2 tbsp. flaxseed meal
1.5 tbsp. coconut oil, melted
1 tbsp. maple syrup (optional)
Toppings: dark chocolate chips & almond slices (use your judgement!)
Remove the pits from the dates or use pre-pitted. Soak in a bowl of warm water for 10 minutes, until they are soft.
Line a baking sheet with wax paper or a reusable silicone mat.
Add the ingredients (except the toppings), in the order they are listed, to a food processor. Mix on medium for 15-45 seconds, or until the ingredients are combined. You may need to stop and scape down the sides.
Using a spoon and your hands, roll the mixture into a small ball and line it on the baking sheet. When all the dough has been formed into balls, loosely cover the pan and set it in the fridge. Let it set for 4+ hours. You can also freeze the balls and pull them out to thaw 15-30 minutes before eating!
