Chocolate Covered Stuffed Dates


This is one of my absolute favorite plant-based, vegan, gluten-free, raw (anything else..haha) desserts! It's simple, takes just 15 minutes to make, is naturally sweet & delicious. Just 4 ingredients: dates, almond butter, pecans, and dark chocolate. Make a batch and store them in the fridge or it's the perfect sweet treat to share with friends/family. Aligns with a whole, real and fresh diet that supports clean and natural eating.

Vegan I Gluten-Free I Raw


Serves: 16 stuffed dates

Time: 15 minutes + setting time


16 dates, pitted

1 cup almond butter

16 pecans (or nut of choice)

1 cup vegan, dark chocolate chips



Line a container or plate with a silicone mat or wax paper and set aside.


Make a slice/opening in the date and remove the pits. You want to open up the date but still keep it in one piece.

Note: if you are using pre-pitted dates, still open the date.


Use a spoon to scoop ~1 tbsp. of almond butter (or however much fits) into each date.


Press a pecan, or any nut you like, slightly into the nut butter.


Transfer the dates into your container and place in the fridge while you prepare the chocolate.


Melt the chocolate in a sauce pan over low heat, stirring frequently. When smooth, remove it from the heat and retrieve the dates.


Using a spoon, coat the bottom half of each stuffed date with the melted chocolate.


Return the container to the fridge to allow the chocolate to harden.


Serve and enjoy!


Storer in the fridge up to 1 week!
