These coconut & craisin clusters also go great on top of smoothie bowls, or enjoyed as a mid-afternoon snack! They take just 30 minutes to make, and you'll be devouring these healthy, plant-based, naturally sweet bites of bliss!
Vegan I Gluten Free
Serves: 8 - 10 clusters
Time: 30 minutes
1 cup coconut shreds
1/2 cup pumpkin seeds
1/3 cup craisins
2 tbsp. chia seeds
1/4 cup maple syrup or honey
Preheat the oven to 350F. Line a baking sheet with a silicone baking mat or parchment paper.
In a mixing bowl, combine all ingredients and stir well.
Use two spoons to scoop the mixture into round clumps on a baking tray.
Note: don't make the rounds too big to help prevent crumbling after baking. Use the back of the spoon to gently press them into shape. At this stage the ingredients will be loose, not stuck together.
Bake the coconut clusters 15 - 18 minutes, until golden brown.
Remove the tray from the oven and let the clusters rest 15 - 20 minutes. Allow them to set/harden.
Serve once completely cooled.
Store 5 - 7 days on the counter in an airtight container.
