Serves: 2 - 4 people

4 large cucumbers, skin peeled
1 cup crème fraîche (click here for recipe!)
1 clove garlic, minced
2 tbsp. fresh dill (or herbs of choice)
2 tbsp. lemon juice
Salt & pepper to taste
To prepare the cucumber salad - Use a vegetable peeler to remove the skin from the cucumbers. Slice thinly or use a vegetable peeler to make thin, long ribbons. Place the cut cucumber in a large mixing bowl.
Add the remaining ingredients. Stir to combine.
Taste and adjust to your preferences, adding more lemon juice, salt or pepper, as desired.
To serve - Serve fresh or from the fridge, garnished with fresh herbs.
To store - Keep leftovers 1 day in the fridge.
Note: As the cucumber salad sets it will release water, stir to combine.
