Pretty PINK vegan, gluten-free, healthy pancakes! These buckwheat pancakes are naturally colored with dragon fruit! They are slightly sweet, light and fluffy, and made from wholesome ingredients. Blend your ingredients and have your pancakes prepared in 15 minutes! This plant-based breakfast uses less than 10 ingredients for easy digestion and supports a healthy lifestyle!

Serves: 10 - 12 small pancakes
Time: 15 minutes
1/2 cup rice flour
1/2 cup buckwheat flour
1 cup coconut milk
1 large banana
1/2 red dragon fruit
1 tbsp. maple syrup or honey
1/2 tsp. baking soda
1/8 tsp. salt
Maple syrup / honey drizzle
Add all your ingredients to blender and mix until smooth, ~15-30 seconds.
Heat a large skillet or pancake pan over medium-high heat. Add a bit of coconut oil to the pan to prevent sticking. When hot, add ~1/4 - 1/3 cup batter for each pancake. Leave enough space to easily flip. The smaller the pancake the easier to cook without browning. Cook 2 - 3 minutes, until the edges and center begins to bubble. Use a spatula to flip the pancake, cook the second side an additional 1 minute, until golden.
Place the cooked pancakes on a plate and continue the process until all the batter is used.
Decorate with your favorite toppings - dragon fruit, coconut shreds, almond slices, maple syrup or honey drizzle!
Enjoy warm and fresh or store 1 day in the fridge.
Note: The pancakes are pink/purple, yet the cooking process will brown them slightly.
