Healthy Peanut Butter 'Reese's Cups'

Vegan I Gluten Free


Serves: 6 - 8 cups

Time: 20 minutes


Chocolate Layer

1/2 cup coconut oil, melted

1/4 cup maple syrup or honey

1/2 cup cacao powder


2 cups roasted peanuts

1/4 cup coconut oil (+ more as needed)

2 tbsp. maple syrup or honey

1 tsp. cinnamon

1/4 tsp. salt

To make the chocolate layer - In a small mixing bowl mix all the chocolate layer ingredients. Stir till smooth and combined.


Using silicone muffin molds add 1 tbsp. of the chocolate mixture into the bottom of each. Place them in the freezer to harden.


To make the peanut butter - add all ingredients to a blender and mix on medium-high speed until smooth. Adjust consistency with more coconut oil, but keep it slightly thick. Stop and scrape down the sides as needed. Use the blender's mixing stick to keep the mixture blending. Let cool slightly if the nut butter is heated during the blending process.


Roll the peanut butter into small balls, ~1 - 2 tsp. Place the peanut butter ball on top of the bottom chocolate layer. Flatten the PB slightly but keep it away from the edges of the muffin mold.


Spoon 2 tbsp. of the chocolate mixture over the peanut butter layer to cover the top.


Place the 'Reese's' back in the fridge or freezer to harden and set.


Top with coconut shreds and peanuts.


Enjoy!


Store leftovers 1 - 2 weeks in the fridge or freezer.
