Jackfruit Loaded Nachos



Vegan I Gluten Free Serves: 4-6

Time: 20 minutes

1 tbsp. olive oil

1/2 yellow onion, sliced

4 cloves garlic, minced

2 (15 ounce) cans young jackfruit, rinsed and drained

1/2 cup vegetable broth

1/2 lime, juiced

2 tsp. chili powder

1 tsp. cumin

1 tsp. paprika

1/2 tsp. oregano

1/2 tsp. salt

4 handfuls Multigrain chips

1 cup Vegan Cheese Sauce

Toppings: avocado, black beans, red onion, diced tomatoes, scallions, cilantro, lime


Heat a large skillet with 1 tbsp. Olive oil over medium-high heat. Add the onion and garlic and sauté 3-5 minutes until just beginning to brown. Add the jackfruit, vegetable broth, lime juice, and spices. Using a potato masher or the back of a fork, mash the jackfruit to shreds. Stir to combine well. Simmer on medium for 7-10 minutes until warmed and flavors blended. If the mixture starts to dry out, add in more broth or water.


Prepare the toppings and create a nacho bar!


Divide the chips among 4 plates and top with all desired condiments!

Serve or store ingredients for 3-5 days.
