Jackfruit Loaded Nachos

Not your average nachos... EVEN BETTER! These plant-based, vegan, cheesy, loaded nachos are a meal that will satisfy the whole family! Vegan I Gluten Free Serves: 4-6

Time: 20 minutes

Spiced Jackfruit

1 tbsp. olive oil

1/2 yellow onion, sliced

4 cloves garlic, minced

2 (15 ounce) cans young jackfruit, rinsed and drained

1/2 cup vegetable broth

2 tsp. chili powder

1 tsp. cumin

1 tsp. paprika

1/2 tsp. oregano

1/2 tsp. salt

1 lime, juiced

4 handfuls Multigrain chips



Black beans

Red onion

Diced tomatoes




To make the jackfruit - Heat a large skillet with 1 tbsp. olive oil over medium-high heat. Add the onion and garlic and sauté 3-5 minutes until just beginning to brown. Add the jackfruit, vegetable broth and spices. Using a potato masher or the back of a fork, mash the jackfruit to shreds. Stir to combine and evenly distribute the spices. Simmer on medium for 7-10 minutes until warmed and flavors blended. Continue to add more liquid if needed to keep the mixture moist and prevent sticking to the pan (as the mixture cooks the liquid will absorb & evaporate.) When heated through and tender, remove from the heat and set aside. Stir in the lime juice. Taste and adjust as desired.

Prepare the toppings in separate bowls and create a nacho bar!

Divide the chips among 4 plates and top with all desired condiments and spiced jackfruit!

Serve or store ingredients separately for 2 - 3 days.
