
Vegan I Gluten Free Serves: 2
Time: 10 minutes
1 large avocado
1/2 cup culinary coconut milk (the thick white part at the top)
1/4 cup liquid from the culinary coconut milk
1 lime zested
1 1/2 limes juiced
3 tbsp. maple syrup
Pinch of salt
1 cup granola
Place all ingredients (except granola) into a food processor or blender and mix until smooth. Add more liquid 1 tbsp. at a time if it appears to be chunky, but try to keep the consistency thick.
Split into 2 parfait bowls, layering and topping with granola.
