Keylime Coconut Yogurt Parfait

Time: 10 minutes


1/2 cup homemade simple & sweet granola

1 cup coconut yogurt

2 lime, juiced

2 tbsp. fresh mint, chopped

1 tsp. coconut sugar

1/4 tsp. salt


Toppings

Lime juice

Chopped mint

Granola

Coconut flakes



Divide the granola evenly among your parfait glasses.


In a small mixing bowl add the remaining ingredients. Stir to combine. Taste and adjust sweetness or sourness as desired.


Divide the yogurt mixture among the parfait glasses.


Top with a squeeze of lime and your favorite toppings!


Enjoy fresh or store the yogurt mixture 1 - 2 days in the fridge.
