Peanut, Chocolate & Coconut Nice Cream Popsicles

Vegan I Gluten Free


Serves: 4 - 6 popsicles

Time: 15 minutes + overnight soaking + 6+ hours freezing time


1 cup cashews, soaked overnight

1 cup coconut cream / (1 (15 ounce) can full fat culinary coconut milk chilled in the fridge 24 hours (the thick white part that accumulates on top.)

1/4 cup maple syrup or honey

1/4 cup peanut butter

2 tbsp. coconut oil

1 tsp. vanilla extract (optional)

1/2 tsp. cinnamon


1/3 cup peanuts


Chocolate Coating

1/4 cup coconut oil

1/4 cup cacao paste, melted

1/4 cup cacao powder

1/4 cup maple syrup or honey

Pinch of sea salt


Toppings

Crushed peanuts

Coconut shreds

To prepare the cashews - Place the cashews in a bowl and cover with 2 - 3 inches of water. Soak the cashews overnight, 8 - 12 hours. Drain the water and rinse the jelly coating off the nuts.


To make the nice cream - Add all your ingredients to a blender, except for the peanuts. Mix on medium-high speed until smooth and creamy. Add your peanuts and pulse 2 - 3 times until incorporated but still in small pieces.


Transfer your mixture into your popsicle molds. (I like to use these silicone molds!)


Place your popsicles in the fridge until set, 6+ hours or overnight.

To make the chocolate coating - Add all your chocolate coating ingredients to a mixing bowl. Stir to combine.


Remove the popsicles from the silicone mold.


Use a spoon to cover the popsicles in chocolate. The coating will begin to harden immediately when in contact with the cold. Sprinkle your toppings of choice onto the popsicle before the chocolate completely sets.

To store - Keep leftovers in a container in the freezer for 2 - 4 weeks.
