Vegan I Gluten Free
Time: 15 minutes
2 servings gluten-free veggie pasta (like these or these)
1 cup grated vegan pepper-jack cheese (recipe here!)
1/3 cup coconut milk
1/8 tsp. salt
Add water to a sauce pan and bring to a boil over medium-high heat. Once boiling, add your noodles and stir. Simmer for 4 - 6 minutes, depending on the type of noodles. Note: read package instructions. Always do the taste test for tenderness.
Strain your noodles and add to a large mixing bowl. Add the remaining ingredients to the mixing bowl and stir well to combine.
Divide the Mac & Cheese evenly among bowls and garnish with your favorite topping choices!
