Rainbow Salsa



Vegan I Gluten Free Serves: ~5 cups

Time: 15 minutes

1 (15 ounce) can organic black beans, rinsed and drained

1 (15 ounce) can organic corn, rinsed and drained

1 organic tomato, seeded and diced

1/2 small red onion, finely diced

1/2 red pepper, finely diced

2 limes, juiced

1/2 bunch cilantro, chopped

1/2 tsp. salt

1/2 tsp. ground cumin

1 avocado, diced

In a large mixing bowl add all the ingredients but the avocado. Stir to combine. Last, fold in the diced avocado.

Serve with organic tortilla chips, top on a salad, nachos or burrito bowl, add quinoa and use to stuff bell peppers, etc!


Store in the fridge 2-4 days in an airtight container.
