Time: 20 minutes
2 large handfuls leafy greens of choice
1 handful snap peas
1/2 cucumber, 1/2 mooned
1/2 cup broccoli, small florets
1/4 avocado, sliced
2 tbsp. sun flower seeds
Fresh herbs: cilantro, spring onion, Thai basil
3 - 4 tbsp. water
1 tbsp. olive oil
1 - 2 tbsp. fresh Thai basil (or herb of choice)
1/2 lime, juiced
1 tsp. apple cider vinegar
1 clove garlic, minced
Salt and pepper to taste
Wash and prepare the vegetables for the salad. Add all the ingredients to your bowl!
In a single blender cup or food processor add all the dressing ingredients. Blend on medium speed until well combined. Adjust consistency with more liquid as needed.
