2 slices of bread (gluten-free optional)
2 large lettuce leaves
1 tomato, sliced
1/4 avocado, sliced
4 - 6 slices vegan smoked cheese
1/4 cup Roasted Red Pepper Salsa
Roasted Red Pepper Salsa
1 large tomato, chopped
2 roasted red bell peppers, skin removed & sliced
2 cloves garlic
1/2 cup almonds
1/3 cup hazelnuts
1/4 cup cilantro
1/4 cup olive oil
2 tbsp. sherry vinegar
1 1/2 tsp. paprika
1/4 tsp. red pepper flakes
Salt & pepper to taste
To prepare the sandwich - Slice two pieces of bread and toast to golden brown.
Prepare the vegetable toppings for the sandwich.
On the bottom slice of bread, layer the lettuce leaves, tomato slices, avocado, and vegan smoked cheese.
To make the Roasted Red Pepper Salsa - Add all ingredients to a food processor or blender and mix until thick and creamy, 30 - 60 seconds. Adjust the taste to your preferences (more vinegar, garlic, spices, etc.).
Spread the salsa onto to the top slice of bread and complete the sandwich.
To serve - Serve warm with pickles on the side. Enjoy!
To store - Best served fresh. Keep leftovers 1 day in the fridge.
