Time: 25 minutes
450g pumpkin, cubed
1 head broccoli, small florets
1 head cauliflower, small florets
Long beans, chopped
2 carrots, mooned
Tahini Dip
1/4 cup tahini
1/4 cup water
1/4 cup olive oil
1 lemon, juiced
1 clove garlic, minced
Pinch of salt
To steam the vegetables - Chop the vegetables accordingly and place them in a steamer rack. Steam for 10 - 15 minutes, until tender and vibrant.
To make the tahini dressing - Combine all ingredients in a food processor. Mix on medium speed until well combined, 30 - 60 seconds. Adjust the consistency with more water as needed.
To serve - Add the steamed veggies and tahini sauce to a plate. Garnish with sesame seeds.
To store - Keep veggies 1 - 2 days in the fridge. Store leftover tahini 5 - 7 days in the fridge.
