Vegan I Gluten Free I Raw
Serves: 2 - 4
Time: 15 minutes
2 cups (~1/2 small head) green cabbage, sliced thin
1 cup red cabbage, sliced thin
1 Pink Lady apple, grated
1 large carrot, spiralized or grated
1/4 cup sun flower seeds
1/4 cup raisins
1/4 cup cilantro, chopped
2 tbsp. maple syrup or honey
1/2 lemon, juiced
1 tbsp. dijon mustard
1/4 tsp. salt
Combine all ingredients in a large mixing bowl. Stir to combine.
Taste and adjust as needed, adding more mustard, salt, lemon, herbs, etc. to meet your preferences!
Serve fresh. Note: you may want to drain excess liquid.
Store leftovers in the fridge 1 - 2 days.
