Texas Pete) 1 tsp. vegan worcestershire sauce 1 tsp. apple cider vinegar 1 clove garlic, minced 1/4 tsp. Salt 1/4 tsp. Pepper 2 tbsp. Olive oil 8 pieces Simple Kneads bread, Ezekiel bread, or serve over a salad bed 1/2 cup sauerkraut 1 tbsp. + 1tsp. dijon mustard Cut the tempeh in half (through the short side), so you get two even square pieces. Then using a long sharp knife, gently slice the segment through the center, creating in total 4 thin, square segments. In a small baking dish (9x9) place the tempeh in a single layer. In a small mixing bowl mix the marinade ingredients together. Pour the mixture over the tempeh and let rest, covered, for 1 hour, turning half way through. This will allow the tempeh to absorb the flavor. When the tempeh is ready, heat a non-stick skillet over medium-high heat. Add the 2 tbsp. olive oil. When hot but not smoking, add the pieces of tempeh in a single layer. Cook for 3-5 minutes, per side. Browning each side well. Turn the heat to medium and pour the rest of the marinade from the dish over the tempeh. Cook until the sauce is reduced and absorbed. While the tempeh is cooking, prepare the dressing in a small mixing bowl. Combine all ingredients and stir well. Toast the bread in a toaster oven until desired golden brown. If eating over a bed of greens, wash and finely chop the leaves placing in a bowl.
Spread 1 tsp. of dijon mustard on four pieces of bread to use as the bottom layer. Add the cooked tempeh. Top with sauerkraut. Spread the dressing on the top piece of each bread and complete the sandwich. Enjoy along with a side salad or roasted vegetable. Store leftovers tempeh, dressing or kraut in the fridge for 3-5 days.
