Thai Mango Salad

Serves: 2

Time: 20 minutes


2 cloves garlic

1 chili (optional)

1 lime, juiced

2 tbsp. tamari sauce

1 tbsp. maple syrup or honey

1/8 tsp. salt

4 - 6 green mangos, peeled & grated*

1 large carrot, grated*

1 ripe mango, sliced thin

2 tomatoes, sliced


* Use a ridged vegetable peeler to make long & thin slices.


Toppings

Thai basil

Cilantro

Spring onions

Peanuts

Bean sprouts

Sesame seeds

Lime wedge

If preparing in a mortar and pestle - add the garlic and chili and crush. Add the sauces and mix again. Add the green mango and carrot slices - mix until well combined and softened. Transfer to a mixing bowl and stir in the ripe mango, tomatoes, and toppings.
