Time: 30 minutes

12 - 16 ounces extra firm tofu, drained, pressed & sliced

2 tbsp. tamari sauce

2 tsp. curry powder

Honey Mustard Dressing

1/3 cup coconut milk

2 tbsp. spicy/whole-grain mustard

1 tbsp. maple syrup or honey

1 small clove garlic, minced

1/4 tsp. turmeric powder

1/4 tsp. salt

Preheat the oven to 300F. Line a baking sheet with a silicone mat or parchment paper.

Slice the tofu in long strips or cubes and press out any extra moisture.

Place the strips in a bowl and mix with the tamari sauce and curry powder until evenly coated.

Transfer the tofu pieces to the baking sheet, and bake 20-25 minutes, flipping half way through for even cooking.

To make the honey mustard, add all ingredients to a small mixing bowl and stir to combine.

Serve warm or store leftovers 1-2 days in the fridge.
