Vegan I Gluten-Free
Serves: 1 - 2 cups
Time: 30 minutes
2 medium size Yukon Gold Potatoes, peeled and sliced
1 large carrot, sliced
1/4 cup nutritional yeast
1 tbsp. olive oil
½ lemon, juiced
1 clove garlic, minced
1/2 tsp. apple cider vinegar
1/2 tsp. salt
1/2 tsp. onion powder
1/4 - 1/2 tsp. turmeric
1/4 tsp. ground paprika
To make the cheese sauce - Peel your potatoes and carrots. Place in a steamer pot and cook until soft, 10 - 15 minutes.
Place all cheese sauce ingredients in a blender or food processor and mix until smooth and creamy, 1 - 2 minutes.
Taste and adjust seasoning as needed.
To serve - Serve fresh and warm, try in my recommended recipes like 'Mac & Cheese', 'Cheesy Nachos', 'Cheesy Tacos', etc.
To store - Keep leftovers 4 - 6 days in an airtight container in the fridge. Reheat before serving.
