Serves: ~2 cups
Time: 25 minutes
Vegan Cheese Sauce
2 medium size Yukon Gold Potatoes, sliced
1 large carrots, sliced
1/4 cup nutritional yeast
1 tbsp. olive oil
½ lemon, juiced
1 clove garlic, minced
1/2 tsp. apple cider vinegar
1/2 tsp. salt
1/2 tsp. onion powder
1/4 - 1/2 tsp. turmeric
1/4 tsp. ground paprika
To make the cheese sauce - Peel your potatoes and carrots. Place in a steamer pot and cook until soft, 10 - 15 minutes.
Place all cheese sauce ingredients in a blender and mix until smooth and creamy, 1 - 2 minutes.
Taste and adjust seasoning as needed.
To serve - Enjoy your cheese sauce in a variety of ways including nachos, Mac and cheese, tacos, casseroles, and more!
To store - Keep 2 - 3 days in the fridge!
