Plant-based energy bars with a white chocolate coating - YUM! These vegan, high-protein bars are sure to satisfy not just your sweet tooth but your hunger. They are packed full of nutrients and superfoods to keep you feeling full. I use a warming spice blend of cinnamon, nutmeg, and clove so each bite tastes like Christmas. These healthy bars will feel like raw gingerbread cookies. For extra festive flare, add a vegan white chocolate coating!
Vegan I Gluten-free
Serves: 10 - 12 bars
Time: 15 minutes + 4+ hours setting time
1 cup dates, soaked
1 cup almonds
1/2 cup almond butter
2 tbsp. cacao nibs
1/4 cup pumpkin seeds
1/4 cup coconut shreds
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. ground clove
Water as needed, 1 tbsp. at a time
150g vegan white chocolate
Line a container or baking sheet with parchment paper and set aside.
To prepare the dates - Pit the dates and add them to a bowl. Cover with water and let soak 10 - 20 minutes, until soft. Strain the dates and reserve the water.
To prepare the energy bars - Add the dates and remaining energy bar ingredients to a food processor or blender. Pulse the mixture until the nuts have broken down into small pieces and everything is well combined. You are looking for a slightly sticky consistency. Adjust by adding 1 tbsp. of the reserved date water at a time and mixing.
Transfer the mixture into the prepared container. Use a spatula to spread the mixture into a thin even layer.
Place the bars in the fridge and let set 4+ hours, until set.
Cut the bars into your desired shape.
To prepare the chocolate - Melt down your vegan white chocolate until smooth. To do this you can heat water in a sauce pan, once boiling cut the heat off. Break your chocolate into small pieces and add to a mixing bowl. Place the mixing bowl on the water and the heat will slowly melt the chocolate. Stir well.
Remove the bowl of melted chocolate from the water. One by one dip your energy bars into the chocolate. Use a spoon to help evenly coat and flip the bar. Place the chocolate coated energy bar back onto the parchment paper. Continue the process until all bars are covered in chocolate.
Note: You can alternatively drizzle the chocolate over the bars, just coat 1/2 the bar, etc. get creative!
Place the bars back into the fridge for the chocolate to set, 30+ minutes.
To serve - Enjoy the energy bars as a healthy snack or treat!
To store - Keep bars in the fridge 3 - 5 days or in the freezer up to 1 month.
