Vegan I Gluten Free
Serves: 12 - 15 balls
Time: 20 minutes + setting time
1 cup dates, pitted & soaked
1 1/2 cups almond flour
1/4 cup cacao powder
1/4 cup peanut butter
2 tbsp. coconut oil
1 - 2 tbsp. maple syrup or honey
1/4 tsp. salt
Water as needed
Toppings

Pit and soak the dates until soft, 10 - 20 minutes.
Add all your ingredients to food processor or blender and mix until smooth and creamy.
Transfer the mixture to a bowl and place in the freezer for 1 hour to thicken.

Remove the mixture and roll into bite size balls.
Top with cacao powder, coconut shreds or chopped nuts.
Serve and enjoy.
Store leftovers 2+ weeks in the freezer.
