Vegan I Gluten Free Serves: 9 brownies
Time: 25 minutes
1 (15 ounce) can blackbeans, drained and rinsed
1/2 cup oat bran
1/2 cup maple syrup
1/4 cup coconut oil
2 tbsp. unsweetened cocoa powder
2 tsp. pure vanilla extract
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup dark chocolate chips, divided
Preheat the oven to 350F. Grease a 9x9 baking dish with coconut oil.
Combine all ingredients (except the chocolate chips) into the food processor. Mix on medium speed until combined, about 30 seconds-1 minute.
Add in 1/4 cup chocolate chips, using a spatula to stir in. Transfer the batter into the baking dish and smooth over with the side of the spatula. Tap the dish a couple times on the counter to release any air bubbles. Sprinkle the remaining chocolate chips on top.
Bake in the oven for 15-18 minutes. Remove from the heat and let rest on the counter for 15-30 minutes. Enjoy warm or cut the brownies, leaving them in the pan, and set it in the fridge. They keep 3-5 days and stay just as moist and delicious!
These brownies are so easy & DELICIOUS! We didn’t have oat bran, so I pulsed rolled oats through the food processor and it worked great as a substitute. Highly recommend!!
