Time: 15 minutes
1 cup quick oats
2 cups coconut milk
1/2 tsp. vanilla (optional)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground clove
1/4 tsp. salt
Cinnamon Apples
2 apples, cubed
2 tbsp. vegan butter (or substitute coconut oil)
1 tsp. cinnamon
1 - 2 tbsp. maple syrup or honey
Toppings
Raisins
Maple syrup or honey drizzle
To prepare the oats - Add you oats, nut milk, vanilla and spices to a small sauce pan and bring to a boil over medium heat. Once boiling, reduce the heat to low and simmer, 4-6 minutes. Stir occasionally.
Add more liquid to adjust consistency, depending on how you prefer the texture of your oats (more runny or thick).
To prepare the cinnamon apples - In a small skillet melt the vegan butter over medium heat.
Add the cubed apples and cinnamon. Stir to evenly coat. Cook, 3 - 5 minutes, until tender and slightly browned.
Stir in your sweetener of choice and heat an additional 1 - 2 minutes.
To serve - Transfer the oat mixture into a bowl. Top with your cinnamon apple mixture.
Garnish with raisins and coconut chips.
