What's for breakfast? Cinnamon rolls... crepes...? How about both! Turn simple and easy, plant-based, gluten-free crepes into cinnamon rolls! No baking needed! This sweet breakfast treat is sure to turn your morning into a special occasion! It's sweet, satisfying, and a health(ier) alternative to your store bought brands. Don't say I didn't warn you that these cinnamon rolls are dangerously easy to make and oh-my! good!
Vegan I Gluten Free
Serves: 2 - 4 rolls
Time: 25 minutes
Crepe
1 cup rice flour
1/2 cup tapioca flour
2 tbsp. coconut blossom sugar
1/2 tsp. salt
1 cup coconut milk
1 tbsp. coconut oil, divided (for greasing the pan)
Cinnamon Sugar Coating
3 tbsp. coconut oil
2 tbsp. honey
1 tbsp. coconut sugar
2 tsp. cinnamon
5 dates, chopped
Icing
1 cup cashews, soaked
1/4 cup coconut milk
2 tbsp. coconut sugar

In a small heat proof bowl add the cashews for the icing and cover with boiling water, let soak for 30+ minutes.
Add all the crepe ingredients to a mixing bowl and stir until most clumps are gone and you have a smooth batter. Adjust consistency as needed with more liquid or flour.
Heat a large skillet over medium-high heat. Add 1 tsp. oil to the pan. When hot, slowly pour the crepe mixture in a thin, even layer until it fills the bottom of the pan. Start in the center of the pan and circle your way to the outer edges. Cook 2-4 minutes until the bottom is beginning to turn golden brown and the middle is starting to bubble. Use a spatula to flip the crepe, cooking another 1-3 minutes.
Continue the process until all the crepe batter is used.

In a mixing bowl add all the cinnamon sugar coating ingredients. Stir until combined. Use a spoon to spread the sweet mixture onto the crepe.

With a sharp knife, carefully cut the crepe into 2-3 inch wide strips. To make the cinnamon roll, start rolling one strip over itself. When you get to the end, take a second strip and place it 1 inch into the other as you continue to roll. Continue the process, tucking in a new strip each time, until you're desired size is created.
To make the icing add all ingredients to a blender or food processor. Mix on medium-high speed until smooth and creamy. Adjust for sweetness.
Top your cinnamon rolls with icing and enjoy warm!
