Citrus Salad



This easy to make vegan citrus salad is refreshing and light - yet satisfying! Loaded with fresh greens, herbs, almonds, avocado, orange slices and pomegranate seeds - YUM! Pair it with this lemon, ginger and turmeric dressing recipe for an extra zing of flavor. This salad variation will quickly become a new go-to favorite!

4 large handfuls leafy greens

2 orange / clementine, peeled and divided

1/2 cup pomegranate seeds

1 small shallot, sliced

1 avocado, sliced

1 cucumber sliced

1/4 cup sliced almonds

Fresh cilantro for garnish


Lemon, Ginger, Turmeric Dressing

1/4 cup water

2 tbsp. almond butter

2 cloves garlic, minced

2 tbsp. grated ginger

2 tsp. lemon zest

1 1/2 tbsp. lemon juice

2 tsp. maple syrup or honey

1/4 tsp. turmeric

Salt and pepper to taste

Divide the salad ingredients evenly among two plates.


To prepare the dressing add all ingredients to a blender or food processor and mix on medium speed until smooth and well combined. Taste and adjust as needed.

Store leftover dressing 1 - 2 days in the fridge.
