Serves: 2
Time: 15 minutes
1 cup oats
1 cup coconut milk
1/2 cup water + more as needed
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground clove
1/2 tbsp. coconut oil
2-3 bananas, peeled and sliced
Toppings:
Almond butter drizzle
Honey
Grated cacao
Unsweetened coconut shreds
Nuts/seeds
Add the coconut milk, water, oats and spices to a sauce pan. Bring to a boil over medium heat.
Simmer for 5-7 minutes, until the oats are tender. Add more liquid as needed to adjust consistency.
While the oats are cooking, heat a small skillet with the coconut oil. Add the sliced bananas, and sear over medium heat. Cook 1-2 minutes per side. When browned on each side and warmed through, remove the bananas from the heat.
Add your oats to a bowl and top with the warmed banana slices.
Decorate with you favorite toppings!
