Comforting Banana Oat Bowl

This oat bowl is warm and comforting with the cinnamon spice blend and seared bananas. Cooked in coconut milk and completed with your favorite toppings- it's a hearty, healthy and happy way to start your morning! Use oat-bran if available for maximum health benefits. I advise purchasing gluten-free and organic oats if possible. Enjoy this breakfast bowl of deliciousness.

Vegan I Gluten Free

Serves: 2

Time: 15 minutes

1 cup oats

1 cup coconut milk

1/2 cup water + more as needed

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. ground clove

1/2 tbsp. coconut oil

2-3 bananas, peeled and sliced


Almond butter drizzle


Grated cacao

Unsweetened coconut shreds


Add the coconut milk, water, oats and spices to a sauce pan. Bring to a boil over medium heat.

Simmer for 5-7 minutes, until the oats are tender. Add more liquid as needed to adjust consistency.

While the oats are cooking, heat a small skillet with the coconut oil. Add the sliced bananas, and sear over medium heat. Cook 1-2 minutes per side. When browned on each side and warmed through, remove the bananas from the heat.

Add your oats to a bowl and top with the warmed banana slices.

Decorate with you favorite toppings!

Enjoy warm.
