This plant-based breakfast is delicious, filling and satisfying. Prepare the night before and have a healthy breakfast on the go in the morning! It's perfect for busy mornings or when you're in a rush. This vegan chia pudding and smoothie combo can be topped with fresh fruits and toppings to fuel your day and nourish your body.
Vegan I Gluten Free
Serves: 2-4
Time: 10 minutes + overnight soaking
Chia Pudding:
1/4 cup chia seeds (or basil seeds)
1 cup nut milk
1/2 tsp. cinnamon
1/2 tsp. vanilla
Spirulina smoothie:
2 frozen bananas
1 cup frozen mango
1 tbsp. spirulina powder
1/2 cup water + more as needed
Toppings:
Fresh fruit
Unsweetened coconut shreds
Nuts
Seeds
Granola
The night before, prepare the chia pudding mixture. Combine all ingredients in a jar and stir. Let rest 5 minutes, then stir again breaking up any clumps. Let set in the fridge over night.
In the morning, prepare the smoothie by placing all ingredients in a blender and mixing on medium speed until smooth and creamy. Add more water or alternatively nut milk, until desired consistency.
Layer the smoothie and chia mixture in your jars/cups.
Decorate with your favorite toppings and enjoy!
