Grilled cheese sandwiches are a classic to quench and nourish the inner child within us all! Make my version of this timeless sandwich to enjoy it in a way that supports your health. For best flavor, choose a vegan cheese that's made from wholesome ingredients - my favorite... aged cashew cheese! Vegan I Gluten Free
Time: 10 minutes
2 slices gluten-free bread
Sliced vegan cheddar cheese*
1 tbsp. vegan mayo (optional)
1 tbsp. vegan butter (or coconut oil)
*I opt for artisan vegan products or brands that use clean ingredients. Always read labels to know what is in your vegan cheese!
Heat a large skillet over medium-high heat. Add 1/2 of the vegan butter (or coconut oil) to the pan. Once hot add a slice of bread. Cook 2 - 4 minutes, until golden brown.
Carefully place your cheese onto the toasted bread.
Note: depending on what cheese you use will determine how the cheese warms/melts.
Spread a thin layer of vegan mayo onto the remaining slice of bread. Place it over the warming cheese. Use a spatula to gently press the sandwich. Flip it to brown the second slice. Add the remaining butter to the pan to help toast and flavor your sandwich.
When both sides of your sandwich are grilled, add your grilled cheese to a plate and enjoy!
Store leftovers 1 day in the fridge.
