This simple, healthy vegan grilled cheese is one that will satisfy the child within all of us. It's quick and easy to make and tastes amazing! No additives and preservatives from store bought vegan cheese - make your own pepper jack cheese! Option to use your favorite bread brand or opt for gluten-free bread. Using whole and fresh ingredients will optimize the nutrition of this plant-based meal.
Vegan I Gluten Free (optional)
Serves: 1 sandwich
Time: 10 minutes
2 slices of bread (homemade or gluten free)*
1/2 cup vegan pepper-jack cheese, grated (recipe here!)
2 tbsp. coconut oil
*Always read the ingredients of your bread if you are buying store bought. Look for minimal additives, preservatives, and sugar.
Grate your cheese and set it aside.
Heat a large skillet over medium-high heat. When hot, add 1 tbsp. coconut oil. Add your slices of bread and heat until golden brown, 2 - 4 minutes. Flip the slices of bread and add the remaining 1 tbsp. coconut oil to the pan, swirling it around to coat the bottom of the bread. Once both sides are browned to your liking, remove the bread from the heat.
Top the bottom slice of bread with your grated pepper jack cheese. Gently press the top slice of bread over the cheese & to secure it in place.
