Serves: ~2 cups

100g (~1 cup) feta, crumbled (recipe here!)
1/2 cup cucumber, diced
1/8 cup sun dried tomatoes, chopped
1 spring onion, chopped
3 tbsp basil, chopped
1/3 cup cherry tomatoes, chopped
2 tbsp. olive oil
1/2 tsp. dried oregano
Salt and pepper to taste
To prepare the dip - Prep all the vegetables as listed.
Add all ingredients to a mixing bowl and stir to combine.
Taste and adjust seasoning to your preferences.
To serve - Garnish with fresh herbs and serve cool or at room temperature.
