Papaya Boat

Vegan I Gluten Free


Serves: 2

Time: 10 minutes


1 papaya, halved and seeded

1 cup coconut yogurt

1 small mango, cubed

1 banana, sliced

1/2 cup pineapple, sliced

Toppings of choice: goji berries, basil seeds, chia seeds, granola, coconut shreds, etc.


Cut the papaya in half long ways. Use a spoon to remove the seeds. Place the halves on a plate.


Fill with coconut yogurt (1/2 cup each), fruit slices, and toppings of choice.


Enjoy!
