Serves: 1

Time: 15 minutes + overnight soaking


2 cups coconut milk

1/4 dragon fruit

1 banana

1 tsp. maca powder

1/4 tsp. salt

1 tbsp. maple syrup or honey

1/4 tsp. vanilla (optional)


1/2 cup oats

1/4 cup chia seeds (or basil seeds)


Toppings

Coconut Shreds

Passion Fruit

Fruit

Honey or maple syrup drizzle

Add the coconut milk, fruit, Maca powder, salt, natural sweetener, and vanilla to a blender and mix on medium speed until well combined and vibrant.


Transfer the mixture to a jar. Stir the oats & seeds into the liquid. Let the mixture rest 5 minutes, then stir again, breaking up any clumps.

Store the mixture in the fridge over night.


In the morning, add your favorite toppings to the jar and enjoy!


Note: adjust the consistency to your preference by stirring in more coconut milk or seeds.
