Raw Fudgey Brownies

Raw I Vegan I Gluten Free


Serves: 9 brownies

Time: 35 minutes


1 cup almonds

1/2 cup walnuts, divided

1/2 cup cacao powder

1/2 tsp. vanilla (optional)

1/2 tsp. salt

1 1/2 cups dates

2 - 3 tbsp. water, (more as needed)


Chocolate frosting

1/4 cup coconut oil

1/4 cup cacao powder

1 tbsp. coconut sugar (or substitute 2 tbsp. maple syrup or honey)

1 tbsp. smooth peanut butter

Pit the dates and soak in water until soft (~10-20 minutes).


Prepare a 9x9 dish or container by rubbing a little coconut oil around the edges - or line it with a silicone mat or parchment paper to prevent sticking.


In a food processor or blender add the almonds and 1/3 cup of the walnuts. Pulse the nuts until broken down into pieces.


Add the cacao, vanilla (optional) and salt to the processor. Again, pulse the mixture several times until combined and the nuts are in small pieces. Transfer the mixture into a large mixing bowl.


Drain the dates and squeeze out excess water. Transfer the dates to the food processor and mix on medium speed until a sticky paste forms. Add water 1 tbsp. at a time as needed to adjust the consistency. Stop and scrape down the sides of the processor if needed.


Add the date paste to the mixing bowl and use your hands or a spatula to mix everything together. When everything is well incorporated, place the sticky 'dough' mixture into your prepared container. Use your hands or the spatula to spread the mixture in an even layer.


Place the container in the fridge to set ~10 - 20 minutes.


To prepare the chocolate layer, add all ingredients to a small mixing bowl, stir to combine.


Pour the chocolate layer over the top of the brownies. Crush the remaining walnuts and sprinkle on top. Return the brownies to the fridge for the chocolate to harden, ~10 - 20 minutes.


Cut it into even squares and enjoy!


Store leftover in the fridge or freezer for up to 10 days!
