Raw, Sweet & Spicy Cucumber Noodles

Simple 15 minute, healthy meal idea. Raw, vegan, gluten free cucumber noodles with a sweet and spicy mango sauce. Just add all your sauce ingredients to a blender and you're ready to serve! It's light, fresh, and delicious! Cucumber noodles take just minutes to make and are as a great pasta alternative! No-cooking necessary.

Raw I Vegan I Gluten Free

Serves: 2

Time: 15 minutes

4-5 large cucumbers

1 large mango

1 cup cherry tomatoes

1 small shallot, chopped

1 clove garlic

2 tbsp. fresh dill

1/4 tsp. red chili flakes

Salt and pepper to taste


2 scallions, chopped


Vegan parmesan 'cheese'

Use a spiralizer or ridged vegetable peeler to shred the cucumber into noodles. Use as much of the vegetable as you can, typically the noodles stop forming as you get to the center seedy part.

Combine all other ingredients into a blender or food processor and mix on medium until smooth and well combined. Taste and adjust as needed with more spices, herbs, etc.

Top the cucumber noodles with the sweet/spicy sauce and garnish with fresh herbs or vegan parmesan.


Best served fresh. I find that the noodles don't last long in the fridge before going bad. (Hence, why I always question pre-made vegetable noodles from the super market...)
