Snickers Stuffed Dates



Does life get better than peanut butter and chocolate? This is one of my absolute favorite plant-based, vegan, gluten-free, raw (anything else..haha) desserts! Snickers inspired stuffed dates - YUM! It's simple, takes just 15 minutes to make, is naturally sweet & finger-lickin' good. Simple ingredients for easy digestion. Make a batch and store them in the fridge or it's the perfect sweet treat to share with friends/family. Aligns with a whole, real and fresh diet that supports clean and natural eating.


Raw I Vegan I Gluten-Free


Serves: 16 stuffed dates

Time: 15 minutes + setting time


16 dates, pitted

1/4 cup peanuts


Homemade PB

2 cups roasted peanuts

1/4 cup coconut oil

2 tbsp. honey or maple syrup

1/2 - 1 tsp. cinnamon

1/4 tsp. salt


Chocolate Drizzle

1/4 cup cacao powder

1/4 cup coconut oil

2 tbsp. maple syrup or honey

Line a container or plate with a silicone mat or wax paper and set aside.


Make a slice/opening in the date and remove the pits. You want to open up the date but still keep it in one piece. Note: if you are using pre-pitted dates, still open the date.


To make the peanut butter - add all ingredients to a blender or food processor. Mix on medium -high speed until smooth and creamy. Adjust the consistency to your liking with more/less oil. Stop and scrape down the sides of the blender as needed.


Use a spoon to scoop ~1/2 tbsp. of peanut butter (or however much fits) into each date.


Press 2 - 3 peanuts slightly into the nut butter.


Transfer the dates into your container and place in the fridge for ~10 minutes - prepare the chocolate layer.

To make the chocolate layer - add all ingredients into a small bowl and stir until well combined and smooth.


Using a spoon, drizzle the chocolate over the stuffed date. You can alternatively dunk half the stuffed date into the chocolate or coat the entire date in chocolate. Continue the process one by one until all are coated in chocolate.


Return the container to the fridge to allow the chocolate to harden.


Serve and enjoy!


Store in the fridge or freezer.
