This simple and sweet, vegan strawberry jam is the perfect addition to morning toast, pancakes, & more! I use minimal, wholesome ingredients in this recipe so your sweet cravings are satisfied while still supporting a healthy, plant-based lifestyle. Vegan I Gluten Free
Serves: ~1 cup jam
Time: 10 minutes + 30+ minutes setting time
1 cup berries (fresh or thawed)
1/4 cup coconut oil
3 tbsp. maple syrup or honey
1 tsp. lemon juice
1/4 - 1/2 tsp. cinnamon
1/2 tsp. vanilla (optional)
To prepare the jam - Add all ingredients to a food processor or blender. Mix on medium-high speed until smooth and thick.
Transfer the mixture into a bowl and place in the fridge to set, 30 + minutes.
To serve - Once the jam has thickened, enjoy over gluten-free toast, with pancakes, on top of coconut yogurt and fruits, etc.
To store - Keep 3 - 5 days in the fridge or store in the freezer up to 1 month.
