Raw I Vegan I Gluten Free
Serves: 6 -8 cups
Time: 20 minutes
Chocolate Layer
1/2 cup coconut oil, melted
1/4 cup maple syrup or honey
1/4 cup cacao powder
4 dates, pitted & chopped
1/4 cup tahini
3 tbsp. coconut flour
To make the chocolate layer - In a small mixing bowl mix all the chocolate layer ingredients. Stir till smooth and combined.
Using silicone muffin molds add 1 tbsp. of the chocolate mixture into the bottom of each. Place them in the freezer to harden.
To prepare the tahini filling - Chop the dates into small pieces and add to a small mixing bowl. Stir in the tahini and coconut flour.
When the chocolate has hardened, place ~1 - 2 tsp. of the tahini mixture into the center of the mold.
Press the filling to lay flat, but avoiding the edges of the mold.
Pour ~2 tbsp. of chocolate on top of the date/tahini mixture to cover. Use your finger or a spoon to gently press the dates flatter if they poke up from the chocolate too much.
Return the molds to the fridge/freezer to set.
To serve - Once completely hardened, remove the silicone mold and serve! Enjoy immediately after thawing (the chocolate will melt).
To store - Keep in the fridge/freezer up to 1 month.
