Trader Joe's Cauliflower Gnocchi with Pesto

Looking for a quick and easy meal idea that's healthy, pre-prepared, and filling? I don't often encourage packaged foods, but these frozen cauliflower gnocchi from Trader Joe's have minimal ingredients, are vegan, and only take minutes to cook. Top it off with some pesto (Trader Joe's Kale and Cashew) or make your own (recipe in Quest For Zest: Thailand). You can add a few fresh ingredients to the dish to make it even more nutritious!

Vegan I Gluten Free

Serves: 1-2

Time: 15 minutes

1 bag cauliflower gnocchi from Trader Joe's

1 tbsp. olive oil

1 clove garlic, minced

1/4 white onion, sliced thin

1/2 cup pesto (Kale Cashew & Basil Pesto from Trader Joe's or homemade)

1-2 tbsp. nutritional yeast

2 large handfuls greens of choice (spinach, kale, etc.)

Salt and pepper to taste

Optional add ins:

Pine nuts

Sun-dried tomatoes

Vegan parmesan

Cook the gnocchi according to the bag instructions. (For pan searing, place the frozen gnocchi in a large sauce pan with 1/4 cup of water; cover and let steam until the water is evaporated, ~5-7 minutes. Add more water if needed to make sure the gnocchi is heated through.)

When the gnocchi is tender and the water is absorbed, add 1 tbsp. olive oil. Sear the gnocchi, stirring occasionally for 4-6 minutes. When they start to brown, add the garlic and onion to the pan. Sauté 1 minute.

Stir in the remaining ingredients.

Once the greens are wilted and the sauce is heated, transfer the gnocchi to a bowl and serve. Garnish with fresh basil if desired.
