2 - 3 large cucumbers, noodled*
1/2 cup coconut yogurt
1 lime, juiced
1 clove garlic, minced
3 - 4 tbsp. fresh dill, chopped
Salt and pepper to taste
2 tbsp. sun flower seeds
*Use a ridged vegetable peeler or spiralizer to create noodles from the cucumber.
Noodle your cucumbers into a large mixing bowl and set aside.
In a small mixing bowl combine the coconut yogurt, lime juice, garlic, fresh dill, salt and pepper. Stir to combine. Taste and adjust to your liking.
Pour the yogurt sauce over the cucumber noodles and stir to evenly coat. Garnish with sun flower seeds.
