This vegan, gluten-free (optional) sandwich is one that, no doubt, will leave you satisfied! It's a plant-based BLT that nourishes your mind, body & spirit. It's stacked with marinated tofu 'bacon', fresh greens, tomato, avocado, onion, and a homemade mayonnaise. This vegan sandwich takes less than 30 minutes to make; the recipe is simple to follow and it's delicious to eat!
Vegan I Gluten-Free (optional)
Serves: 1
Time: 20 minutes + 20 minutes marinating time
Vegan Bacon
6 - 8 ounces firm tofu, sliced
2 tbsp. soy sauce
1 tsp. almond butter
1 tsp. mustard
1/2 tsp. paprika
1/8 tsp. chili pepper
Pinch of salt
2 sliced bread (homemade or gluten free)
1/2 avocado, sliced
1 tomato, sliced
1 small shallot, sliced
Fresh greens / herbs (lettuce, cilantro, spring onions, etc.)
Vegan Mayo (find my recipe here!)
Black pepper
To marinate the tofu - Add all tofu marinade ingredients to a mixing bowl and stir to combine. Drain the tofu and press out any excess liquid. Slice your tofu into ~1/4inch strips. Place the tofu in a single layer in a small dish. Pour the marinade over the tofu, making sure it's evenly coated. Let rest 20+ minutes at room temperature, flip halfway through.
While the tofu is marinating, prepare the rest of your sandwich ingredients! Slice your avocado, tomato, and onion. Heat/toast your bread if you desire. Wash your greens. Prepare your vegan mayo*.
*If using store bought vegan mayo - make sure to read ingredients to know what is in your packaged product!
To cook the tofu - Heat a large skillet over medium-high heat. Add 1 tsp. coconut oil to the pan. Once hot, add your tofu slices. Cook each side 3 - 5 minutes, until golden browned. Pour the remainder of the sauce over the pieces while they cook.
Add your tofu 'bacon' to the sandwich, a crack of black pepper, and enjoy!
Store the sandwich 1 day in the fridge or ingredients separately for 2 - 3 days in the fridge.
