This creamy, vegan mayonnaise recipe is simple to make and tastes amazing! I use minimal oil and clean ingredients to support a healthy lifestyle. It's a perfect spread to add to your favorite vegan sandwiches like this 'vegan 'bacon', avocado, tomato sandwich' or this 'chickpea 'tuna'' recipe.
Vegan I Gluten Free
Serves: 2 cups
Time: 15 minutes
1/2 cup sunflower seeds
Meat of 1 coconut
1/4 cup nut milk (almond, soy, or coconut)
3 tbsp. olive oil
2 1/2 tsp. vinegar
1 tsp. mustard
1/4 tsp. garlic powder
1/4 tsp. salt

Add all your ingredients to a food processor* and mix on high speed until smooth, thick and creamy!
Taste and adjust as needed!
*A food processor will work best but you can alternatively use a blender. If using a blender, try using a single serve cup or, to get the mixture really smooth, a solution would be to double the recipe and make a larger batch so there would be more substance to blend.
